
Enjoy a lighter take on a classic British pub favorite with these perfectly crispy Air Fryer Scotch Eggs. Featuring a savory seasoned sausagemeat and bacon wrap around a tender egg, they are the ultimate high-protein snack or picnic treat.
Preheat your air fryer to 180°C. Place 4 eggs into the air fryer basket and cook for 8 minutes. Once finished, immediately transfer the eggs to a bowl of ice-cold water to stop the cooking process. Allow them to cool completely before carefully peeling them.
In a large mixing bowl, combine the sausagemeat, finely chopped bacon, sage, and dried mixed herbs. Use your hands to mix until the ingredients are thoroughly incorporated. Divide the mixture into four equal balls, then flatten each into a disc approximately 10cm in diameter. Using baking parchment can help prevent the meat from sticking to your work surface.
Prepare three shallow bowls: one with plain flour, one with the remaining egg (beaten), and one with the panko breadcrumbs. One by one, roll a peeled boiled egg in the flour, place it in the center of a sausagemeat disc, and gently mold the meat around the egg until fully enclosed. Roll the meat-covered egg in flour again, dip it into the beaten egg wash, and finally coat it thoroughly in panko breadcrumbs.
Increase the air fryer temperature to 200°C. Lightly spray the scotch eggs with oil and place them in the basket. Cook for 20 minutes, turning halfway through if necessary, until the exterior is golden brown and the sausagemeat is fully cooked. Serve warm or chilled with a side of mustard.
For a slightly runnier yolk, reduce the initial egg cooking time to 6 or 7 minutes. If the sausagemeat is sticking to your hands, try lightly wetting them with water before shaping. These eggs store well in the refrigerator for up to three days, making them perfect for meal prep.
