
Start your morning with a gut-friendly, nutrient-packed breakfast that practically makes itself. These creamy overnight oats combine tangy kefir with fresh raspberries and a hint of dark chocolate for a delicious, no-fuss meal prep option.
In a medium mixing bowl, combine the jumbo oats, 1 tablespoon of the hemp seeds, and the chia seeds. Stir well to ensure the seeds are evenly distributed throughout the oats.
Pour in the kefir yogurt and semi-skimmed milk. Stir the mixture thoroughly until all dry ingredients are fully incorporated. Cover the bowl tightly with a lid or plastic wrap and refrigerate for at least 8 hours, or ideally overnight, to allow the oats to soak and thicken.
The next morning, give the oats a quick stir to loosen the texture. If the mixture is too thick, you can add an extra splash of milk.
Divide the oat mixture between two glass tumblers or bowls. Top each serving with the lightly crushed raspberries, the remaining 2 teaspoons of hemp seeds, the chopped pumpkin seeds, and the finely chopped dark chocolate. Serve immediately while chilled.
For a vegan alternative, substitute the kefir and milk with coconut-based kefir and almond or oat milk. If you prefer a bit more sweetness, drizzle a teaspoon of honey or maple syrup over the top before serving.
