In a large mixing bowl, combine the chia seeds, almond or hazelnut milk, cacao powder, maple syrup, vanilla extract, and a generous pinch of sea salt.
Whisk the mixture vigorously until the cacao powder is fully incorporated and no clumps remain. Let it sit for 5-10 minutes, then whisk again to prevent the seeds from settling at the bottom.
Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Refrigerate for at least 4 hours, or ideally overnight, to allow the pudding to thicken to a creamy consistency.
Before serving, give the pudding a final stir. Spoon into four individual glasses and top with frozen berries and a sprinkle of cacao nibs for added texture.
For an even smoother texture, you can blend all the ingredients in a high-speed blender before chilling. If the pudding is too thick after setting, simply stir in a splash more milk. This pudding keeps well in the fridge for up to 5 days.
