
Give your holiday leftovers a delicious second life with these crispy, golden Bubble & Squeak patties. Served with creamy avocado and a hint of chilli, it's the ultimate comforting brunch for Boxing Day morning.
In a large mixing bowl, roughly mash the cold paprika roast potatoes using a fork. Add the leftover cabbage, cumin seeds, and crushed garlic.
Season the mixture with salt and pepper to taste. Use your hands to mix everything together and shape the mixture into two firm, round patties.
To pan-fry: Heat the olive oil in a large frying pan over medium-high heat. Fry the patties for 3-4 minutes on each side until they are hot through and have a crisp, golden-brown crust.
To air-fry: Preheat your air fryer to 200°C. Lightly brush the patties with oil and place them in the basket. Cook for 8-10 minutes, flipping halfway through, until crispy and heated through.
While the patties cook, slice the avocado and drizzle it with the fresh lemon juice to prevent browning and add a bright tang.
Serve the hot patties topped with the sliced avocado. Finish with a sprinkling of chilli flakes and a pinch of flaky sea salt.
If your potato mixture feels too dry to hold together, add a small splash of milk or a teaspoon of flour to help bind the patties. You can easily swap the cabbage for other leftover greens like shredded Brussels sprouts or kale.
