
Elevate your weekend morning with these fluffy pancakes packed with juicy grated apples. Served with a zesty, whipped lime and brown sugar yogurt topping, they offer a perfect balance of sweetness and citrus brightness.
In a large mixing bowl, combine the self-raising flour, grated apples, baking powder, and light brown soft sugar. Add 1 teaspoon of sea salt flakes and stir well to ensure the apples are evenly distributed through the dry ingredients.
In a separate jug or bowl, whisk the eggs and milk together. Gradually pour the egg mixture into the flour and apple mix, whisking continuously until you have a smooth, thick batter.
Prepare the topping by placing the double cream and a small amount of sugar in a bowl. Use an electric whisk to beat the cream to stiff peaks. Gently fold in the Greek-style yogurt and most of the lime zest, then keep the mixture chilled in the refrigerator until needed.
Heat 1 tablespoon of oil in a large non-stick frying pan over medium heat. Spoon 2 tablespoons of batter per pancake into the pan, spreading them slightly into small circles.
