
This hearty dhal with poached eggs pairs creamy red lentils, chickpeas, spinach, and warming spices with a cool herby raita. It is a satisfying vegetarian meal that works beautifully for dinner and makes smart use of leftovers for a second serving.
Heat the rapeseed oil in a large frying pan over medium heat. Add the sliced onions and cook for about 5 minutes, stirring occasionally, until softened and lightly golden.
Stir in the cumin seeds, turmeric, mustard seeds, garam masala, sliced garlic, and red chilli. Cook for 30-60 seconds, stirring constantly, until the spices smell fragrant.
Add the red lentils, chickpeas, and prepared vegetable stock. Bring to a gentle simmer and cook uncovered for about 15 minutes, stirring now and then, until the lentils are tender and the dhal has thickened.
Fold in the baby spinach in batches and cook until just wilted. If the dhal becomes too thick, loosen it with a small splash of water.
Transfer half of the dhal to a container and let it cool before refrigerating for another meal. Keep the remaining dhal in the pan and make four small wells in the surface.
Crack 4 eggs into the wells, spacing them apart. Cover the pan and cook over medium-low to medium heat for 8-10 minutes, or until the whites are set and the yolks are cooked to your liking.
While the eggs cook, make the raita. Blend the yogurt, remaining garlic, ginger, coriander, and mint until smooth and flecked with herbs.
Serve the dhal and eggs with half of the herby raita and a few extra coriander leaves, if desired. For the reserved dhal, reheat until piping hot, add a splash of water if needed, poach the remaining 4 eggs in it the same way, and serve with the remaining raita.
Keep the dhal at a gentle simmer so the lentils soften without catching on the bottom of the pan. For firmer yolks, cook the covered eggs a little longer; for softer yolks, check them early. Refrigerate the reserved dhal and raita separately for up to 3 days, and reheat the dhal until bubbling hot before adding fresh eggs. If rapeseed oil is unavailable, use another neutral cooking oil.
