
A fragrant and tender whole chicken roasted in a rich coconut and lemongrass broth. This one-pot wonder features a zesty cilantro-chili rub tucked under the skin for maximum flavor in every bite.
Preheat your oven to 390°F (200°C).
Prepare the aromatic rub: Finely mince one red chili. In a small bowl, combine the minced chili, grated ginger, minced garlic, coconut oil, 1/2 cup of chopped cilantro, salt, and pepper.
Prepare the chicken: Rinse the chicken and pat it thoroughly dry with paper towels. Starting at the neck end, use the back of a teaspoon to gently loosen the skin from the breast and thighs, being careful not to tear it.
Apply the rub: Spoon the cilantro mixture under the loosened skin. Use your fingers on the outside of the skin to spread the mixture as evenly as possible over the meat.
Set up the pot: Pour the chicken broth into a Dutch oven or deep roasting tray. Add the kaffir lime leaves, lemongrass, and the remaining whole red chili.
Roast the chicken: Place the chicken in the broth, cover with a lid, and roast for 45 minutes. Remove the lid, pour in the coconut milk, and add the baby potatoes around the chicken. Roast uncovered for a further 30 minutes, or until the chicken juices run clear when pierced.
Rest the meat: Remove the chicken from the pot and place it on a carving board. Cover loosely with foil and let it rest for 5 minutes.
Skim the broth: Skim any excess fat off the surface of the cooking liquid in the pot.
Finish the sauce: Stir in the lime juice, coconut sugar, and fish sauce until the sugar is dissolved. Add the remaining 1/2 cup of chopped cilantro.
Serve: Carve the chicken and serve it directly in the broth with the potatoes, or serve the broth separately in a jug.
For a crispier skin, you can place the chicken under the broiler for the last 2-3 minutes of roasting. If you cannot find kaffir lime leaves, substitute with 1 teaspoon of lime zest. To make the sauce even richer, use full-fat coconut milk instead of light.
