
This quick wonton soup base turns a bowl of cooked wontons into a savory, aromatic soup in minutes. Soy sauce, sesame oil, scallions, and white pepper create a simple broth, while optional chili oil, lard, dried shrimp, and mushroom powder add deeper flavor.
While the wontons cook, prepare the soup base in a serving bowl. Add the light soy sauce, sugar, sesame oil, chopped scallions, and white pepper.
Add any optional flavor boosters you like, such as cilantro, lard, dried shrimp flakes, mushroom powder, dark soy sauce, or chili oil. Stir the seasonings together so they dissolve evenly.
Transfer the cooked wontons to the bowl. Pour in the boiling water, or use the wonton cooking water if it is not too cloudy or starchy. Stir gently, taste, and add a small pinch of salt if needed. Serve hot.
For a richer bowl, replace the boiling water with hot chicken stock. If using wonton cooking water, avoid the last starchy water from the pot, which can make the soup cloudy and heavy. Add chili oil at the end so you can control the heat.
