Recreate that classic Chinese takeout flavor at home with this simple, no-cook duck sauce. Perfectly sweet, tangy, and fruity, it's the ultimate dipping sauce for egg rolls, crab rangoon, and crispy appetizers.
In a small mixing bowl, combine the sugar and hot water. Stir continuously until the sugar has completely dissolved.
Whisk in the apricot preserves until the mixture is smooth and well-incorporated.
Remove the pit from the salted pickled plum. Add the soft plum flesh to the bowl along with the liquid from the plum jar, soy sauce, and rice vinegar.
Use a fork to mash the plum and mix all ingredients together until the sauce is well-combined. Let the mixture sit for at least 5 minutes to allow the flavors to meld, then stir once more before serving.
For a perfectly smooth consistency, you can pulse the sauce in a blender for a few seconds. If you enjoy a spicy kick, add a pinch of red pepper flakes. This sauce can be stored in an airtight container in the refrigerator for up to two weeks.
