
Finely zest the orange, then juice it. Add the orange juice and about half of the zest to a blender or mixing jug.

Add the egg and blend briefly until the mixture is smooth and lightly frothy.

Add the all-purpose flour, baking powder, and Greek yogurt. Blend just until the batter is smooth, scraping down the sides if needed; avoid overmixing.

Pour the batter into a large microwave-safe mug or bowl, leaving room for it to rise. Microwave on high for about 6 minutes, or until the center is set and a toothpick comes out mostly clean.

Let the cake stand for 1-2 minutes before serving. Top with the remaining orange zest and your favorite toppings, such as Greek yogurt, berries, nuts, or honey.
