Remove the beef roasting joint from the refrigerator and let it sit at room temperature for 20 to 30 minutes to ensure even cooking throughout the meat.
Preheat your air fryer to 220°C. Pat the beef dry with paper towels and rub the neutral oil over the entire surface of the joint.
In a small bowl, mix the dried thyme, onion granules, mustard powder, salt, and black pepper. Rub this spice blend thoroughly into the beef.
Place the beef in the air fryer basket and cook at 220°C for 10 minutes to create a flavorful, seared crust.
Reduce the air fryer temperature to 170°C. Continue cooking for 30 minutes for medium-rare or 40 minutes for medium-well done.
Transfer the roast to a carving board and cover it loosely with foil. Let the meat rest for at least 20 to 30 minutes before carving to ensure the juices redistribute.
