Transform fresh summer berries into a vibrant, jewel-toned liqueur with this easy spiced blackberry vodka recipe. Infused with cinnamon and bay leaf, it makes a perfect gift or a sophisticated base for seasonal cocktails.
Place the fresh blackberries, cinnamon stick, bay leaf, and golden caster sugar into a large, sterilized glass jar.
Pour the vodka over the ingredients. Seal the jar tightly and swirl it gently until the sugar has mostly dissolved.
Store the jar in a cool, dark place for 2 to 3 weeks. For the first week, turn or gently shake the jar once a day to ensure the flavors meld properly.
After the infusion period, strain the vodka through a fine-mesh sieve or muslin cloth into clean glass bottles. Label the bottles and store; the vodka will maintain its vibrant color for several months and remain drinkable for up to a year.
Don't throw away the boozy blackberries! They are delicious when folded into muffin batter, served over vanilla ice cream, or used as a topping for pavlova. For a crystal-clear result, try straining the vodka through a coffee filter after the initial sieving.
