
A timeless, rich, and moist Christmas cake packed with brandy-soaked fruits and aromatic spices. This traditional recipe is perfect for making ahead and 'feeding' with alcohol to develop deep, festive flavors for the holiday season.
In a large saucepan, combine the mixed dried fruit, citrus zest and juice, 150ml of brandy, softened butter, and light brown sugar. Set the pan over medium heat.
Bring the mixture to a boil, then reduce the heat and simmer gently for 5 minutes. Transfer the fruit mixture into a large mixing bowl and allow it to cool for about 30 minutes.
Preheat your oven to 150°C (130°C fan/Gas Mark 2). Prepare a deep 20cm cake tin by lining it with a double layer of baking parchment. For extra protection against the long bake time, wrap a double layer of newspaper around the outside of the tin and secure it with kitchen string.
Add the plain flour, ground almonds, baking powder, mixed spice, cinnamon, cloves, flaked almonds, eggs, and vanilla extract to the cooled fruit mixture. Stir thoroughly until well combined, ensuring there are no hidden pockets of flour.
Pour the batter into the prepared tin and level the top with a spatula. Bake in the center of the oven for approximately 2 hours.
After 2 hours, test the cake by inserting a skewer into the center. If it comes out clean, the cake is done. If wet mixture clings to the skewer, return the cake to the oven and check every 10 minutes until fully baked.
Remove the cake from the oven and immediately poke several holes in the surface with a skewer. Spoon over 2 tablespoons of brandy and leave the cake to cool completely inside the tin.
To store, remove the parchment and wrap the cake tightly. Store in an airtight tin and 'feed' it with 1-2 tablespoons of brandy every fortnight. Stop feeding the cake one week before you plan to ice it to allow the surface to dry.
For a non-alcoholic version, replace the brandy with cold black tea or orange juice. If you prefer a darker, more intense flavor, use dark muscovado sugar instead of light brown sugar. This cake is best made at least 4-6 weeks in advance to allow the flavors to mature.
