
A quick and flavorful one-pot meal featuring savory sausage, tender courgette, and a burst of fresh aromatic herbs. This simple pilaf is the perfect healthy solution for a busy weeknight dinner.
Rinse the basmati rice under cold water several times until the water runs clear, then leave it to soak in a bowl of fresh water while you prepare the other ingredients.
Heat the vegetable oil in a medium saucepan that has a tight-fitting lid. Squeeze the sausagemeat directly from the skins into the pan and fry for 2-3 minutes over medium-high heat until the meat is golden and starting to crisp.
Stir in the fennel seeds (or your choice of onion or coriander seeds) and the sliced courgette. Continue to fry for another 2 minutes over high heat, allowing the moisture from the courgette to evaporate.
Drain the rice well and stir it into the pan along with the frozen peas, vegetable stock, and half of the chopped mint and dill.
Bring the mixture to a simmer, then immediately reduce the heat to low and cover with the lid. Cook undisturbed for 10-12 minutes until the rice is tender and all the liquid has been absorbed.
Remove from heat and fold in most of the remaining herbs. Serve hot with a dollop of yogurt on the side and a final scattering of fresh herbs on top.
For the best results, use high-quality sausages like Cumberland or a spicy variety to add more depth to the dish. If you prefer a fluffier pilaf, let the rice sit covered for 5 minutes after cooking before fluffing with a fork. You can substitute the courgette with bell peppers or spinach if desired.
