
Elevate your side dish game with these tender carrots tossed in a unique, sweet-and-savory marmalade bacon butter. The combination of smoky bacon and citrusy glaze creates a sophisticated flavor profile perfect for any roast dinner.
Preheat your grill (broiler) to high. Arrange the bacon rashers on a tray and grill for 3-4 minutes per side until golden and very crisp. Remove from the heat and set aside to cool completely.
Finely mince the cooled bacon. In a small bowl, thoroughly combine the chopped bacon with the softened butter and marmalade until well blended. This flavored butter can be prepared in advance and kept chilled for up to three days.
Place the prepared carrots in a large saucepan and cover with boiling water. Boil for 5-6 minutes until the carrots are cooked through but still retain a slight bite (al dente).
Drain the carrots well and transfer them to a serving bowl. Add slices of the bacon-marmalade butter on top and toss gently until the butter has completely melted and glazed the carrots.
For a vegetarian version, replace the bacon with a pinch of smoked paprika in the butter. If you don't have marmalade, apricot jam with a little fresh orange zest makes an excellent substitute.
