In a large chilled bowl, combine the double cream and vanilla extract. Use an electric hand whisk to beat the mixture until soft peaks form, which should take approximately 2-3 minutes.
In a separate bowl, whisk the evaporated milk until it begins to thicken slightly. Pour the condensed milk over the evaporated milk and gently fold them together until well combined.
Carefully fold the whipped cream mixture into the milk base using a spatula, being gentle to maintain the airy texture. Pour the final mixture into a 3-liter lidded container or a standard loaf tin.
Cover the container and place it in the freezer for at least 6 hours, or ideally overnight, until the ice cream is completely set.
When you are ready to serve, prepare the macerated fruit. In a medium bowl, toss the sliced strawberries with the lime zest, lime juice, and icing sugar. Let the mixture sit for 5-10 minutes to allow the flavors to meld and the juices to release.
Scoop the tres leches ice cream into bowls and top generously with the lime-macerated strawberries and their syrup.
For the best results, ensure your double cream and evaporated milk are very cold before you start whisking. This ice cream keeps well in the freezer for up to two months. If it becomes too firm, simply let it sit at room temperature for 5 minutes before scooping.
