Prepare the turkey legs by making several small incisions through the skin. Insert thin slices of garlic into these cuts. Carefully tuck fresh rosemary needles under the skin to hold them in place and maximize flavor infusion during roasting.
Season the meat generously and evenly with salt and pepper. Brush the legs with olive oil, then place them in the refrigerator to marinate for at least 30 minutes, or ideally overnight for deeper flavor.
Preheat your oven to 200°C (180°C fan/gas mark 6). Place the turkey legs in a roasting tray, cover tightly with aluminum foil, and roast for an initial 10 minutes.
Reduce the oven temperature to 180°C (160°C fan/gas mark 4) and continue cooking for 30 minutes. Check the tray occasionally; if the juices at the bottom begin to dry out or burn, add a small splash of water.

For the crispiest skin, pat the turkey legs dry with paper towels before applying the oil and seasoning. If you prefer a more intense herb flavor, you can mix the seasonings into the olive oil before brushing it on. Always let the meat rest after roasting to ensure the juices redistribute for a tender result.
