Enjoy the cozy flavors of a classic apple pie in a healthy, grab-and-go breakfast. These overnight oats feature creamy chia-infused oats topped with warm, caramelized cinnamon apples for a perfect meal-prep solution.
Prepare the apple by peeling and coring it, then dicing the fruit into small, bite-sized pieces.

In a small pan over medium heat, combine the diced apple, brown sugar, cinnamon, and apple pie spice. Sauté for 5 to 8 minutes, stirring occasionally, until the apples are tender and the sugar has melted into a thick, syrupy glaze.

In a mason jar or airtight container, mix together the oats, chia seeds, milk, and vanilla extract. Stir well to ensure the chia seeds are fully incorporated and don't clump.

Spoon the warm caramelized apple mixture directly on top of the oat base. You can leave it as a layer or gently swirl it in.

Seal the container and store it in the refrigerator for at least 2 hours, though overnight is best for the creamiest texture. These oats will stay fresh for up to 5 days.

For the best texture, use old-fashioned rolled oats rather than quick oats, which can become too mushy. If the mixture is too thick in the morning, simply stir in an extra splash of milk. Top with toasted pecans or walnuts just before serving for an added crunch.
