Heat the vegetable oil in a heavy-based skillet or pot over medium-high heat.
Add the green curry paste. If you are using store-bought paste, also add the minced garlic, ginger, and lemongrass paste. Sauté for 2 to 3 minutes, stirring constantly, until the paste 'dries out' and becomes highly aromatic. Be careful not to inhale the spicy fumes directly!
Pour in the chicken broth and coconut milk. Stir well to ensure the curry paste is completely dissolved into the liquid.
Season the sauce based on your paste type. For store-bought jarred paste, add 1 tsp fish sauce and 1 tsp sugar. For homemade paste, add 3 tsp fish sauce, 3 tsp sugar, and 1/8 tsp salt.
Add the kaffir lime leaves to the pot. Stir the mixture and bring it to a gentle simmer.
Add the chicken thigh pieces. Stir to combine, then lower the heat to medium so the sauce is bubbling gently. Cook for 7 minutes.
Stir in the sliced Japanese eggplants and continue cooking for 5 minutes, or until the eggplant is soft and tender.
Taste the sauce. If you prefer it saltier, add a splash more fish sauce or a pinch of salt. If you prefer it sweeter, add a little more sugar.
Add the snow peas and cook for 2 minutes until they are slightly softened but still vibrant. Stir in the Thai basil leaves and lime juice.
Remove from heat immediately. The sauce should be slightly reduced but still relatively thin—this is the traditional consistency. Do not continue simmering, or the sauce will lose its bright green color.
Serve the curry hot over steamed jasmine rice. Garnish with crispy fried shallots, extra basil, or sliced chillies if desired.
For the best flavor, use full-fat coconut milk. If you can't find kaffir lime leaves, you can substitute with 1/2 teaspoon of lime zest, though the aroma will be slightly different. To keep the chicken extra tender, ensure you are using thighs rather than breasts, as they stand up better to simmering.
