
A hearty and comforting savory pie featuring a rich egg and crème fraîche filling packed with crispy smoked bacon and fragrant herbs. Encased in a flaky, golden buttermilk crust, it's the perfect centerpiece for a weekend brunch or a rustic picnic.
Wrap the butter in baking parchment and freeze for at least two hours, or ideally overnight, until it is completely solid.
Place the flour in a large mixing bowl. Coarsely grate the frozen butter directly into the flour, occasionally dipping the butter's end into the flour to prevent clumping. Pour in the buttermilk and use a cutlery knife to quickly bring the mixture together. Transfer to a work surface and use a bench scraper to fold the dough into a cohesive mass. Cut away one-third of the dough, shape both pieces into flat discs, wrap them tightly, and chill in the refrigerator while preparing the filling.
Place the chopped bacon in a cold frying pan and set it over medium heat. Fry for 5-6 minutes until the fat has rendered and the bacon is golden and crisp. Use a slotted spoon to transfer the bacon to a medium-sized bowl.
Melt a small knob of butter in the same pan over medium-low heat. Add the finely chopped onion and cook for 8-10 minutes until softened and lightly golden. Increase the heat slightly, stir in the grated garlic, and cook for another 2-3 minutes until fragrant. Add the onion mixture to the bacon bowl and let it cool for about 10 minutes.
Preheat your oven to 220°C (200°C fan/gas 8) and place a large baking tray inside to heat up. On a lightly floured surface, roll out the larger pastry disc to approximately 30cm in diameter, enough to line a 23cm pie dish. Gently lift the pastry into the dish and smooth it against the sides. Roll out the smaller disc to the same diameter and set aside for the lid.
Whisk the four beaten eggs into the bowl with the cooled bacon and onions. Stir in the Dijon mustard, crème fraîche, grated nutmeg, and chopped chives. Season generously with black pepper and a small pinch of salt. Pour this filling into the pastry-lined dish.
Lightly dampen the edges of the bottom pastry with water. Place the smaller pastry disc over the top and press the edges with a fork or crimp them with your fingers to create a tight seal. Cut a small cross in the center to allow steam to escape, then brush the top with the remaining beaten egg for a golden glaze. Place the pie dish on the preheated baking tray and bake for 40-45 minutes until the crust is deep golden brown.
Allow the pie to cool completely in the dish before slicing. This helps the filling set properly. Serve with cornichons and extra mustard if desired.
For the flakiest pastry, handle the dough as little as possible to keep the butter from melting. If the pastry feels too soft while rolling, return it to the fridge for 15 minutes. This pie is excellent served at room temperature, making it ideal for make-ahead lunches.
