
Elevate your jacket potato game with a savory soy glaze and a zesty sriracha tuna filling. This quick and healthy meal is packed with protein and served alongside a fresh, tangy spinach salad.
Prepare the potatoes by pricking them several times with a fork. Microwave on high for 10-15 minutes until the centers are soft. While the potatoes are in the microwave, preheat your oven to 200°C (180°C fan/gas 6) or turn on your air fryer.
In a medium bowl, flake the drained tuna and mix it with the mayonnaise, natural yogurt, sliced spring onions, grated ginger, half of the lemon juice, sriracha, and chopped gherkins.
Once the potatoes are tender, use a sharp knife to lightly score the skins. Pour the soy sauce over them and toss quickly to ensure an even coat. Bake in the oven for 15-20 minutes or air-fry at 200°C for 5 minutes until the skins are crispy.
While the potatoes crisp up, whisk together the olive oil, cider vinegar, wholegrain mustard, and the remaining lemon juice to create a dressing. Drizzle this over the fresh spinach. Split the hot potatoes, stuff generously with the tuna mixture, and serve with the spinach salad.
For the crispiest skin, the air fryer is highly recommended for the final step. If you prefer less heat, reduce the sriracha or swap it for a mild chili sauce. You can also substitute the spinach with rocket or mixed greens for a different flavor profile.
