
These enchanting star-shaped biscuits are the ultimate treat for birthday parties or a fun afternoon of baking with the kids. Featuring a buttery shortbread base and a vibrant sprinkle finish, they are as delightful to look at as they are to eat.
Place the softened butter, golden caster sugar, plain flour, and a pinch of salt into a food processor. Pulse the mixture until it reaches a fine, sandy consistency. Add the egg yolk, vanilla extract, and one tablespoon of cold water, then pulse again until the dough begins to clump together. Transfer the dough to a clean surface, knead briefly until smooth, then shape into a disc. Wrap in plastic and chill in the refrigerator for at least 30 minutes.
Preheat your oven to 180°C (160°C fan/gas 4) and line two large baking trays with parchment paper. On a lightly floured surface, roll out the dough until it is slightly thicker than a pound coin. Use a star-shaped cutter to stamp out the biscuits. Carefully transfer the stars to the baking trays and gently press a lolly stick into the base of each star. Bake for 12-15 minutes until the edges turn a light golden brown. Let them cool on the tray for 5 minutes before moving to a wire rack to cool completely.
Prepare the icing by mixing the icing sugar with 2-3 teaspoons of water until you have a thick, spreadable consistency. Spread the icing over each cooled biscuit star and immediately decorate with colorful sprinkles. Allow the icing to set for at least one hour. For a final magical touch, tie colorful ribbons around the sticks just below the biscuit.
If the dough feels too crumbly after processing, add a few extra drops of water until it holds. To ensure the sticks stay secure, make sure they are pressed halfway into the dough star before baking. These are best enjoyed fresh but can be stored in an airtight container for up to three days.
