
Enjoy fluffy, golden pancakes with a sweet apple twist, all made conveniently in your air fryer. These individual-sized treats are perfect for a quick breakfast or a cozy weekend brunch, served with fresh berries and maple syrup.
Lightly oil an 18cm cake tin that fits your air fryer basket and preheat the air fryer to 200°C (400°F).
In a large mixing bowl, whisk together the self-raising flour, baking powder, caster sugar, and a pinch of salt. In a separate jug, whisk the egg with the milk until well combined.
Create a well in the center of the dry ingredients and pour in the milk mixture. Stir gently until just combined; do not overmix the batter.
Pour a quarter of the batter into the prepared tin, spreading it from the outside toward the center to ensure even cooking. Arrange a few thin apple slices on top.
Place the tin into the air fryer basket and cook for 3–4 minutes, or until the pancake is golden brown and a skewer inserted into the center comes out clean.
Remove the pancake and keep it warm under foil while you repeat the process with the remaining batter. Serve warm with fresh berries, maple syrup, or a scoop of ice cream.
For the best results, use a neutral-flavored oil like sunflower or grapeseed to grease the tin. If you don't have self-raising flour, you can substitute with plain flour and an extra teaspoon of baking powder. Ensure the apple slices are very thin so they soften properly during the short cooking time.
