
Peel and finely chop the onion. Heat the oil in a wide pot or deep pan over medium heat, then sauté the onion for 3-4 minutes until softened and lightly golden.



Slice or dice the sausage and add it to the pan. Cook for 4-5 minutes, stirring often, until the sausage is browned around the edges. Season with salt, pepper, and Italian seasoning.

Stir in the tomato paste and cook for 1-2 minutes, letting it darken slightly and coat the sausage mixture. This step helps deepen the flavor of the sauce.


Bring a pot of salted water to a boil. Add the pasta and cook until just slightly softened but still firmer than al dente. Drain well.


Place a thin layer of sliced potato or a piece of bread in the bottom of a lightly oiled pot. Toss the drained pasta with the sausage and tomato mixture, then spoon it over the potato or bread layer.

Cover the pot and cook over low heat for about 35-40 minutes, until the pasta is fully tender and the bottom layer is golden. Serve hot with salad, pickles, or olives.
