Cook the yellow rice according to the package directions.

While the rice cooks, prepare the add-ins. Drain the red beans if desired, and measure the mixed vegetables and leftover steak or chicken.



When the rice is nearly done, stir in the mixed vegetables and red beans. Cook for a few minutes until the vegetables are heated through.



About 10 minutes before the rice finishes cooking, add the leftover steak or chicken. Stir well and continue cooking until the meat is warmed through and everything is evenly combined.

Serve hot. Taste and adjust seasoning if needed before serving.
Frozen mixed vegetables work well here and can be added straight from the freezer. Leftover chicken is an easy substitute for steak. If your beans are heavily seasoned, taste the rice before adding extra salt.
