
These garlic butter noodles are rich, savory, and ready in minutes. Butter, garlic, oyster sauce, fish sauce, and Maggi seasoning create a glossy, deeply flavorful sauce that clings to every strand.
Bring a large saucepan of water to a boil and cook the noodles according to the package directions until just tender. Reserve 1/2 cup of the cooking water, then drain the noodles and set aside.
Return the saucepan to medium heat and melt the butter. Add the minced garlic and cook for 30 to 60 seconds, stirring often, until fragrant and softened but not browned.
Stir in the oyster sauce, fish sauce, Maggi seasoning, and 1/4 cup of the reserved noodle water. Mix well until the sauce is smooth and lightly simmering.
Add the cooked noodles, Parmesan, and green onion to the pan. Toss until the noodles are evenly coated and the sauce clings to them. If the noodles look tight or dry, add more reserved cooking water 1 tablespoon at a time.
Serve immediately while hot. If desired, top with a fried egg or serve with quick-cooked broccolini on the side.
Use ramen noodle cakes, egg noodles, or thin wheat noodles for the best texture. Do not brown the garlic, or the sauce can turn bitter. Leftovers keep well in the refrigerator for up to 2 days; reheat with a splash of water to loosen the sauce.
