
Finely dice the cherry tomatoes and red onion. Thinly slice the chilies, finely chop the cilantro, and mince the garlic if using.


Add the tomatoes, onion, chilies, cilantro, oregano, lime juice, garlic, sugar, and salt to a large bowl. Stir gently until everything is evenly combined.
Taste and adjust with more salt, lime juice, or chili as needed. Transfer to a serving bowl, cover, and chill for at least 30 minutes so the flavors can blend.
Serve cold or at room temperature with tacos, tortilla chips, grilled chicken, burritos, quesadillas, or your favorite Mexican dishes.
