
Preheat the oven to 200 C. Place the salmon on a sheet of parchment paper and drizzle with olive oil. Season evenly with salt.

Top the salmon with the lemon slices and bay leaves, then season with black pepper.

Wrap the parchment securely around the salmon to create a packet. Transfer to a baking tray and bake for 20 minutes, or until the salmon flakes easily with a fork. Serve immediately.
