Preheat your oven to 240°C (220°C fan/gas mark 7). Place a sturdy baking tray inside the oven while it heats; using a preheated tray ensures the fries start crisping the moment they touch the surface.
In a large mixing bowl, combine the frozen French fries, olive oil, dried oregano, dried thyme, garlic granules, and ground cayenne pepper. Add a generous pinch of salt and toss thoroughly until every fry is evenly coated in the herb oil.
Carefully remove the hot baking tray from the oven and spread the seasoned fries across it in a single layer. Bake for 15 minutes until they just begin to turn golden.
Use a spatula to flip the fries, then return them to the oven for another 15–20 minutes. Keep a close eye on them during the final few minutes to ensure they reach a perfect golden-brown crisp without burning.
