
A moist and wholesome cake made with nutty spelt flour and creamy Greek yogurt, topped with tender halved pears. This easy-to-bake treat is finished with a sweet honey glaze, making it perfect for afternoon tea or a rustic dessert.
Preheat your oven to 180°C (160°C fan/Gas 4). Lightly oil a 20cm round cake tin and line the base with baking parchment.
Peel the pears, reserving the skins. Cut the pears in half lengthways, trim the tops, and use a teaspoon to carefully scoop out the cores.
Place the reserved pear peels in a food processor and pulse until finely chopped. Transfer the chopped peel to a jug and whisk in the Greek yogurt, eggs, sunflower oil, and a pinch of salt. Set aside.
In a large mixing bowl, combine the golden caster sugar, spelt flour, baking powder, and ground cinnamon. Pour the wet yogurt mixture into the dry ingredients and whisk thoroughly until the batter is smooth with no dry patches.
Pour the batter into the prepared tin. Arrange the pear halves on top, cut-side down, pressing them very lightly into the mixture. Bake for 55–60 minutes until the cake is golden and a skewer inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil for the final 15 minutes.
Allow the cake to cool in the tin for 10 minutes. Warm the honey in the microwave or over low heat until runny, then brush it generously over the top of the cake. Serve in slices with extra Greek yogurt and a drizzle of honey if desired.
For the best flavor, use ripe but firm pears. If you don't have spelt flour, you can substitute it with whole wheat flour or all-purpose flour. This cake stays incredibly moist and can be stored in the fridge for up to three days.
