Start your morning with these fluffy, high-protein banana pancakes that are naturally sweetened and incredibly simple to prepare. Using a blender for a smooth batter, this healthy breakfast is ready in under 30 minutes and perfect for fueling your day.
Place the eggs, porridge oats, ripe banana, protein powder, milk, baking powder, and ground cinnamon into a blender.
Blitz the mixture for 1-2 minutes until the batter is completely smooth. Check to ensure the oats have fully broken down; if the texture is still grainy, blend for another 30-60 seconds.
Heat a small amount of neutral oil in a non-stick frying pan over medium heat. Pour or ladle small rounds of batter into the pan, leaving space between each pancake to allow for spreading.
Cook for 1-2 minutes until small bubbles begin to form on the surface and the underside is golden brown. Carefully flip the pancakes and cook for another minute until cooked through.
Transfer the cooked pancakes to a warmed oven to keep them hot while you repeat the process with the remaining batter.
Serve immediately topped with a dollop of Greek yogurt, fresh banana slices, and a drizzle of maple syrup.
For the best flavor and natural sweetness, use a very ripe banana with brown spots. If the batter is too thick for your blender, add an extra tablespoon of milk. To keep these gluten-free, ensure your porridge oats are certified gluten-free.
