
Start your morning with a nutrient-packed bowl of creamy porridge topped with a homemade raspberry compote. This vibrant breakfast is loaded with fiber, healthy fats, and antioxidants to keep you energized all day.
Prepare the raspberry compote by placing half of the frozen raspberries and the orange juice in a small saucepan. Simmer over medium-low heat for about 5 minutes until the berries soften and release their juices.
In a separate saucepan, combine the porridge oats, milk, and 450ml of water. Cook over low heat, stirring frequently, until the mixture reaches a thick and creamy consistency.
Divide the creamy oats into bowls. Top each serving with the warm raspberry compote, a dollop of almond butter, the remaining raspberries, orange slices, banana slices, goji berries, and a sprinkle of chia seeds.
For a vegan version, use almond or oat milk. You can also make the raspberry compote in advance and store it in the fridge for up to 3 days.
