
This vibrant cranberry and orange relish is the perfect sweet-tart accompaniment to your holiday roast. Made with just three simple ingredients, it cooks down into a thick, jammy condiment that elevates any festive meal.
In a large saucepan, combine the dried cranberries, orange juice, and light muscovado sugar. Bring the mixture to a boil over high heat.
Once boiling, reduce the heat to medium and simmer gently for about 10 minutes, or until the cranberries have become plump and the liquid is sticky.
Carefully transfer the mixture to a blender and blitz until it reaches a smooth purée consistency. For a more rustic, chunky texture, you can skip this step or pulse only briefly.
Return the purée to the pan and simmer over low heat for an additional 5 minutes until the relish is thick and jam-like. Allow it to cool completely before transferring to a serving dish or a sterilized jar.
For a festive twist, add a pinch of ground cinnamon or a whole star anise during the first simmering stage. This relish pairs beautifully with roast turkey or ham, and also makes a fantastic addition to a cheese board with Brie or Camembert.
