
This cool and creamy Greek tzatziki is the perfect accompaniment to grilled meats, pita bread, or fresh vegetables. Made with thick Greek yogurt, crisp cucumber, and fragrant herbs, it's a refreshing dip that comes together in minutes.
Coarsely grate the cucumber lengthwise to create long strands. Place the grated cucumber in a sieve set over a bowl or the sink, toss with a generous pinch of salt, and let it sit for 10 minutes to draw out excess moisture.
In a medium mixing bowl, whisk together the Greek yogurt, minced garlic, white wine vinegar, and olive oil. Season with a pinch of black pepper.
Using your hands or a clean kitchen towel, squeeze the grated cucumber as hard as possible to remove all the liquid. You want the cucumber to be as dry as possible to prevent a watery sauce.
Stir the dry cucumber strands and the chopped mint or dill into the yogurt mixture. Taste and adjust the seasoning if necessary. Serve immediately or chill for an hour to allow the flavors to develop.
For the best results, use full-fat Greek yogurt for a rich, thick texture. If you have time, let the tzatziki chill in the fridge for at least an hour before serving; this allows the garlic and herbs to properly infuse the yogurt. Store in an airtight container for up to 3 days.
