
Elevate your next barbecue with this decadent, gooey garlic bread stuffed with a blend of mozzarella and creamy Taleggio cheese. Wrapped in foil and grilled until crispy, it's the ultimate crowd-pleasing side dish for any outdoor gathering.
Preheat your barbecue to a medium heat. In a medium bowl, combine the chopped mozzarella, Taleggio, softened butter, minced garlic, parsley, and marjoram. Season with a pinch of salt and black pepper, then mix thoroughly until well combined.
Place the baguette on a cutting board. Using a serrated bread knife, make diagonal cuts along the loaf at 2cm intervals, cutting about three-quarters of the way through. Be careful not to cut all the way through the bottom crust so the loaf stays together.
Generously stuff the garlic cheese mixture into each slit, allowing some to overflow onto the top for a caramelized finish. Sprinkle a pinch of paprika over the top. Wrap the entire loaf tightly in a double layer of heavy-duty aluminum foil.
Place the foil-wrapped baguette directly onto the barbecue grill. Cook for 2 minutes, then rotate onto one side for 2 minutes, and finally onto the other side for another 2 minutes. Carefully open the foil to check if the cheese is melted and the bread is crispy. Serve immediately while hot and gooey.
For the best results, use a high-quality sourdough baguette. If you can't find Taleggio, Fontina or a mild Brie are excellent substitutes that melt beautifully. You can prepare the stuffed baguette up to 24 hours in advance and keep it refrigerated until ready to grill.
