Heat the olive oil in a large saucepan over medium heat. Add the chopped mint and sauté for about 1 minute until fragrant.
Gently stir the cucumber ribbons into the pan. Toss them frequently and cook for 2-3 minutes, just until they are warmed through but still retain their shape.
Remove the pan from the heat. Toss in the chopped dill, parsley, and a generous drizzle of the lemon juice.
Transfer the mixture to a serving platter. Drizzle with additional lemon juice if desired and finish with a sprinkle of fresh lemon zest.
