Place the pasta in a large microwave-safe glass or ceramic bowl. Pour 700ml of boiling water over the pasta and microwave on high for 2 minutes. Stir well, then repeat the 2-minute cooking and stirring process twice more (6 minutes total) until the pasta is tender. Drain the water and return the pasta to the bowl.
In a small jug or bowl, whisk the cornflour with 1 tablespoon of the milk until a smooth paste forms. Gradually stir in the remaining milk until well combined, then pour the mixture over the cooked pasta.
Add the Dijon mustard, grated Gruyère, and grated Cheddar to the bowl. Stir thoroughly to ensure the pasta is evenly coated. You can continue cooking in the same bowl or transfer the mixture to a microwave-safe serving dish.
Microwave on high for 5 minutes, pausing halfway through to give it a good stir. Sprinkle the grated Parmesan over the top and dot with small pieces of butter. Microwave for a final 2 minutes until the cheese is bubbly and melted. Serve with a generous grating of black pepper if desired.
For a smoother sauce, use whole milk. If you don't have Gruyère, you can substitute it with more Cheddar or Emmental. To prevent the pasta from boiling over, ensure your bowl is large enough to allow for bubbling during the cooking process.
