
These golden, crispy baby potatoes are infused with aromatic garlic and fresh thyme for the perfect side dish. Simple to prepare and incredibly satisfying, they pair beautifully with any roast or grilled main.
Preheat your oven to 200°C (400°F), or 180°C if using a fan-forced oven.
Prepare the aromatics: Place the flat side of a chef's knife over each unpeeled garlic clove and hit it firmly with the palm of your hand. The goal is to burst the skin slightly to release flavor while keeping the clove mostly intact.
Place the baby potatoes on a large baking tray. Drizzle with extra-virgin olive oil and sprinkle with salt and black pepper. Toss thoroughly to ensure every potato is well-coated.
Add the smashed garlic and thyme sprigs to the tray. Toss once more to distribute the herbs, then spread the potatoes out into a single layer so they roast evenly.
Roast for 30 minutes, then remove the tray and toss the potatoes. Return to the oven for a further 25 to 35 minutes, or until the potatoes are deeply golden and crispy on the outside.
Garnish with finely chopped parsley or extra fresh thyme if desired, and serve immediately while hot.
For the crispiest results, make sure the potatoes are completely dry before adding the oil. If the potatoes feel stuck to the tray when you try to toss them halfway through, give them a minute or two out of the oven to release naturally, or use a thin metal spatula. You can also add a pinch of smoked paprika for a subtle smoky depth.
