
These Middle Eastern-inspired flatbreads feature juicy, spiced lamb mince baked to perfection and topped with a zesty red onion and parsley salad. It's a quick, flavorful meal that's perfect for a busy weeknight dinner or a casual weekend lunch.
Preheat your oven to 180°C (160°C fan/gas mark 4). In a food processor, combine the lamb mince, crushed garlic, ground cumin, ground cinnamon, lemon zest, lemon juice, tomato purée, and 1 tablespoon of olive oil. Add 1/2 teaspoon of sea salt and a generous pinch of black pepper.
Pulse the mixture until all ingredients are thoroughly combined into a spreadable paste.
Place the flatbreads on a large baking tray. Divide the spiced lamb mixture evenly between them, spreading it in a thin layer right to the very edges to prevent the bread from burning.
Bake in the oven for 17–20 minutes until the lamb is fully cooked through and the edges of the flatbreads are slightly crisp.
While the flatbreads bake, prepare the topping. In a small bowl, toss together the chopped parsley, sliced red onion, red wine vinegar, and the remaining tablespoon of olive oil. Season with salt and pepper to taste.
Once the flatbreads are out of the oven, scatter the fresh parsley salad over the top and serve immediately.
For extra creaminess, serve with a dollop of Greek yogurt or a drizzle of tahini. If you don't have a food processor, you can finely mince the garlic and mix the lamb topping by hand in a bowl.
