Enjoy a gourmet twist on a classic deli favorite with these perfectly seared steaks served alongside tangy sauerkraut and a zesty mustard mayo. It's a high-protein, low-carb meal that brings bold, savory flavors to your dinner table in under 20 minutes.
In a small bowl, whisk together the mayonnaise and English mustard until well combined. Set this mustard mayo aside for serving.
Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
Heat a large frying pan over high heat. Add a drizzle of oil and the butter. Wait until the butter is sizzling and starts to turn a nutty brown color.
Place the steaks in the pan. Cook for 1-2 minutes on one side, then flip. Continue turning the steaks every 1-2 minutes to ensure even cooking and a uniform crust. Aim for a total cooking time of 6-7 minutes for rare, 8-9 minutes for medium-rare, or 10 minutes for medium.
Once cooked to your preference, transfer the steaks to a board or warm plate. Let them rest for at least 5 minutes.
While the steaks rest, add the sauerkraut to the same pan. Sauté in the remaining steak juices for 3-4 minutes over medium-high heat until heated through and slightly browned.
Serve the steaks topped with the warm sauerkraut, with the mustard mayo on the side for dipping.
For the best results, take the steaks out of the fridge 20 minutes before cooking to reach room temperature. This ensures even cooking throughout the meat. If you prefer a smokier flavor, add a pinch of smoked paprika to the steak seasoning.
