Elevate your soups and salads with these crunchy, golden-brown homemade croutons infused with fresh garlic and mixed seeds. This simple recipe turns basic bread into a flavorful, gourmet topping in just 15 minutes.
Preheat your oven to 220°C (200°C fan/gas mark 7). Peel the garlic clove and rub it firmly over both sides of the bread slices to infuse them with aromatic flavor.
Tear the bread into rough, bite-sized chunks and place them in a mixing bowl. Add the oil, a generous pinch of salt, and the mixed seeds, then toss everything together until the bread is evenly coated.
Spread the bread chunks in a single layer on a baking sheet. Bake for 8–10 minutes, or until they are golden brown and crisp.
Remove from the oven and immediately toss with the freshly chopped parsley. Sprinkle over your favorite soup or salad for an instant flavor and texture boost.
For the best results, use day-old or slightly stale bread as it crisps up more effectively. If you don't have mixed seeds, you can substitute them with sesame seeds or poppy seeds, or simply leave them out. Store any leftovers in an airtight container for up to 3 days.
