
These juicy chicken skewers are glazed in a perfect balance of sweet honey and spicy sriracha for an explosion of flavor. Perfect for a quick weeknight dinner or your next backyard barbecue, they are incredibly easy to prepare and always a crowd-pleaser.
Prepare the chicken: Cut the chicken thigh fillets into uniform 2cm (approx. 4/5-inch) cubes to ensure even cooking.
Make the marinade: In a medium mixing bowl, whisk together the honey, Dijon mustard, soy sauce, minced garlic, sriracha, and salt until the mixture is smooth and well combined.
Reserve basting sauce: Transfer 4 tablespoons of the prepared marinade into a separate small bowl. Set this aside to use for basting the chicken during the final stages of cooking.
Marinate the chicken: Add the chicken cubes to the large bowl with the remaining marinade. Toss well to coat every piece, then cover and refrigerate for at least 20 minutes (or up to overnight for maximum flavor).
Assemble the skewers: Thread the marinated chicken pieces onto skewers, placing about 4 pieces on each. Discard any leftover marinade that was in contact with the raw chicken.
Grill the chicken: Heat the oil on a BBQ grill or a large skillet over medium heat. Place the skewers on the heat and cook the first side for about 2.5 minutes.
Baste and flip: Turn the skewers over. Generously brush the cooked side (now facing up) with the reserved marinade. Cook for another 2.5 minutes, then flip again and quickly baste the other side.
Final sear: Turn the skewers one last time and cook for just a few seconds to allow the glaze to caramelize without burning. Transfer the skewers to a clean serving plate.
Serve: Brush any remaining reserved marinade over the skewers on the plate. Serve immediately, ideally alongside cilantro lime rice for a complete meal.
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent them from burning. For a milder flavor, reduce the sriracha to 1 tablespoon; for extra heat, add a pinch of crushed red pepper flakes to the marinade.
