
Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line a sheet pan for easy cleanup.


Pat the salmon fillets dry, then season both sides with kosher salt and coarse black pepper. Slice the lemon and bell peppers if needed.
Place the salmon in the prepared dish and arrange the lemon slices and mini bell peppers around and over the fish.
Bake for 12 to 15 minutes, or until the salmon flakes easily with a fork and the peppers are tender. Serve immediately with the roasted lemon and peppers.
