Indulge in this rich and airy dark chocolate mousse, made with just a few simple ingredients. It's an elegant yet effortless dessert perfect for dinner parties or a sweet everyday treat.
Break the dark chocolate into small pieces and place them in a microwave-safe bowl. Heat in 30-second intervals, stirring well between each burst, until the chocolate is completely smooth and melted.
In a clean, grease-free bowl, whisk the egg whites until soft peaks form. Gradually scatter in the golden caster sugar and continue whisking until the mixture reaches stiff, glossy peaks (this should take about 30-60 seconds).
Add about one-third of the whisked egg whites to the melted chocolate. Mix vigorously and quickly to lighten the base, ensuring the chocolate doesn't cool too fast and harden.
Gently fold the remaining egg whites into the chocolate mixture using a spatula or a large metal spoon. Use a figure-eight motion to keep as much air in the mousse as possible.
Spoon the mixture into 4 individual glasses or ramekins. Refrigerate for at least 2 to 3 hours until firmly set. Serve chilled with a dollop of crème fraîche and a few shavings of dark chocolate on top.
Ensure your whisk and bowl are perfectly clean and dry before beating the egg whites; even a tiny drop of water or fat can prevent them from reaching stiff peaks. For the best texture, use high-quality chocolate with at least 70% cocoa solids.
