
A moist, aromatic pumpkin sponge layered with vibrant marbled cream cheese frosting and topped with adorable white chocolate ghosts. This festive cake combines warm autumn spices with a playful, eye-catching design perfect for any spooky celebration.
Preheat your oven to 180°C (160°C fan/gas 4). Lightly oil two 20cm round cake tins and line the bases with baking parchment. In a large mixing bowl, sift together the self-raising flour, bicarbonate of soda, ground cinnamon, ginger, nutmeg, cloves, and 1/2 tsp of salt.
In a separate large bowl, whisk together the caster sugar, light brown sugar, vegetable oil, eggs, pumpkin purée, milk, and vanilla extract until the mixture is well combined and smooth.
Pour the wet ingredients into the dry flour mixture. Whisk gently until you have a smooth batter. Divide the batter evenly between the two prepared tins and shake them slightly to level the surface.
Bake for approximately 30 minutes, or until the cakes have risen and a skewer inserted into the center comes out clean. Allow the cakes to cool in their tins for 10 minutes, then transfer them to a wire rack to cool completely.
While the cakes cool, prepare the chocolate ghosts. Melt the white chocolate in a heatproof bowl using the microwave in 30-second bursts, stirring in between. Spoon teaspoons of melted chocolate onto a parchment-lined tray, dragging the spoon through the dollop to create a 'tail.' Chill for at least 30 minutes, then draw eyes and mouths with the black icing pen.
To make the frosting, beat the soft cheese and softened butter together until creamy. Gradually add the icing sugar and a splash of vanilla, beating until the mixture is light and fluffy. Divide the icing into two bowls; tint one with orange food coloring and the other with pink.
Place one cooled sponge on a serving stand. Spread a layer of both pink and orange icing over it, then top with the second sponge. Use a palette knife to dot blobs of both colors over the top and sides, swirling them together to create a marbled effect. Press the chocolate ghosts and sprinkles into the icing to finish.
For the best results, ensure your cream cheese and butter are at room temperature before making the frosting to avoid lumps. If you don't have pumpkin purée, you can make your own by roasting fresh pumpkin until soft and blending it until smooth. Store the cake in an airtight container in the fridge for up to three days.
