
A light yet indulgent dessert featuring rich 85% dark chocolate and zesty orange layered with creamy yogurt. This simple, four-ingredient treat is perfect for a healthy post-dinner snack or a quick afternoon pick-me-up.
Melt the dark chocolate in the microwave using short 20-second bursts, stirring in between, or in a heatproof bowl set over a pan of simmering water (ensure the bowl does not touch the water). Let it cool for a minute so it is not piping hot.
Prepare the orange by finely grating the zest from half of it. Cut away the remaining peel and white pith, then roughly chop the orange flesh into bite-sized pieces. There is no need to remove the membranes unless they are particularly tough.
Stir a small spoonful of the yogurt into the melted chocolate to temper it, then fold in the remaining yogurt and the grated orange zest until well combined and smooth.
Place the chopped orange pieces into the bottom of two small serving glasses. Spoon the chocolate yogurt mixture over the fruit. Chill in the refrigerator for at least 30 minutes to allow the cream to set. Scatter with fresh mint leaves just before serving.
For a thicker, more decadent texture, swap the low-fat yogurt for full-fat Greek yogurt. If you prefer a sweeter dessert, you can add a teaspoon of honey or maple syrup to the chocolate mix. These creams can be prepared in advance and will keep well in the fridge for up to three days.
