Recreate the classic dim sum favorite at home with tender-crisp Chinese broccoli and a glossy, savory oyster sauce. This quick and healthy side dish is packed with flavor and takes less than 10 minutes to prepare.
Prepare the broccoli by trimming the woody ends. If the stems are particularly thick, slice them in half lengthwise so that all pieces are roughly the same width for even cooking.
Steam the Chinese broccoli until the stems are just tender but still have a slight bite. You can use a microwave steamer on high for 4 minutes or a traditional stovetop steamer for 3-5 minutes.
Once steamed, stack the stalks together and cut them into 4-inch (10cm) lengths. Arrange them neatly on a serving plate.
In a small saucepan, combine the water and cornstarch. Whisk well until the starch is completely dissolved and no lumps remain.
Add the oyster sauce, dark soy sauce, Chinese cooking wine, sesame oil, vegetable oil, sugar, minced garlic, and ginger to the saucepan. Turn the heat to medium and bring the mixture to a boil.
Allow the sauce to boil for about 30 seconds, stirring constantly until it thickens into a glossy glaze. Remove from the heat immediately.
Drizzle the hot oyster sauce glaze over the Chinese broccoli and serve immediately while warm.
For the best flavor, use fresh garlic and ginger rather than bottled versions. If you prefer a vegetarian version, substitute the oyster sauce with a vegetarian stir-fry sauce made from mushrooms. To keep the broccoli vibrant green, ensure you do not over-steam it.
