Preheat your oven to 150°C (130°C fan/gas mark 2).
Place the cherry vine tomatoes and the halved garlic bulbs into a small baking dish, ensuring they fit snugly together in a single layer.
Season the tomatoes and garlic generously with salt and freshly ground black pepper.
Pour the olive oil over the ingredients and cover the dish tightly with aluminum foil.
Bake for 1 hour and 15 minutes until the tomatoes are soft and slightly shriveled, and the garlic is completely tender.
Remove from the oven. Carefully squash the softened garlic cloves out of their papery skins and stir them into the warm oil to create a rustic confit.
Serve warm alongside slices of crusty bread for dipping into the fragrant oil.
For a Mediterranean twist, add a few sprigs of fresh thyme or rosemary before baking. To store, let the mixture cool completely and keep it in an airtight container in the fridge for up to two weeks; the oil will solidify when cold but will melt again once brought back to room temperature.
