
A vibrant and nutritious plant-based dish featuring creamy butter beans and tender kale. Infused with zesty lemon, aromatic garlic, and a hint of chilli, it's a quick and healthy addition to any meal.
Heat the olive oil in a large saucepan over low heat. Add the sliced garlic, chilli flakes, lemon zest, and a pinch of sea salt. Sauté for about 3 minutes until the garlic is fragrant and softened but not browned.
Stir in the drained butter beans and cook for 5 to 8 minutes, stirring frequently, until the beans are thoroughly warmed through and have absorbed the flavors of the aromatic oil.
Transfer the beans to a bowl, leaving approximately 1 tablespoon of oil in the pan. Increase the heat to medium, then add the sliced kale along with 50ml of boiling water. Cook for 8 to 10 minutes, stirring frequently, until the kale is wilted and tender. Mix the kale back into the beans, squeeze over the fresh lemon juice, and serve warm.
For a creamier texture, lightly crush a few of the butter beans with the back of your spoon while warming them. This dish also works well with spinach or Swiss chard if kale is unavailable, though they will require less cooking time.
