
Juicy, spiced lamb patties paired with a sweet and tangy mango yogurt sauce and quick-pickled red cabbage. This vibrant Middle Eastern-inspired meal is perfect for a quick weeknight dinner or a weekend feast.
Start by lightly pickling the cabbage. In a medium bowl, combine the shredded red cabbage with red wine vinegar, caster sugar, and a generous pinch of salt. Massage the mixture with your hands to soften the cabbage, then cover and refrigerate until ready to serve.
In a large mixing bowl, combine the lamb mince, ground cumin, ground coriander, za'atar, grated garlic, and grated red onion. Mix thoroughly using your hands, then shape the mixture into 14-15 small, round patties.
Prepare the sauce by whisking together the Skyr yogurt and mango chutney in a small bowl. Add a pinch of salt to taste, then set aside.
Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat. Once the oil is hot, carefully place the patties in the pan. Cook for 2-3 minutes per side, or until they are just cooked through and still juicy.
